What I Have Been Up To Monday, Dec 31 2012 

Happy NYE. I must admit though I prefer low key New Year Eves. This year especially since I am getting over a stomach bug. The two big events that took place since my last post is 1) buying a house 1 month before my 26th birthday and 2) taking another trip to Alaska to spend Christmas there!

Since it is New Years here are my resolutions for 2013- hopefully I can keep them (I don’t have the greatest track record):

Resolutions
1) Adopt a vegan diet
2) Complete all 3 races of the Louisville Triple Crown of Running
3) Do yoga at least once a week
4) Blog regularly- at least 3 times per week
5) Read one book for fun each month that is not related to my work or profession

It’s been a long time Sunday, Oct 28 2012 

I have been absent for quite a while but things have been as busy as always. I left off with the end if summer and returning from my trip to Alaska. Well I just got back from ANOTHER trip. My school was on fall break and I took advantage of getting to visit my Sis and brother-in-law. On this trip there was a new little lady to visit -my niece Emma. At 6 weeks old she has quite the personality and meeting her might just be the happiest moment of my life.

In other news work has been very busy and stressful but I try and take it a day at a time and focus on the positives instead of the negatives though sometimes it is hard.

I have also started the home-buying process and should have good news on Monday afternoon!

Goals for the Rest of 2012 Thursday, Jul 12 2012 

So 2012 is more than half over and I wanted to make myself some goals to finish the year strong. However 3 & 4 obviously don’t apply until the school year starts again.

Goals for the rest of 2012:
1) Complete my 8 week 5K training plan (I haven’t run for a while and need to start from scratch).
2) Be able to run 5 miles without stopping by the end of 2012 (I love running and the way it makes me feel. The farthest I have ever run at once is 4.0 miles).
3) Take one night off during the work week to do non-school related things (I make no secret of the fact that I have a hard time letting go and not thinking about work).
4) Eat lunch away from my desk, preferably with other staff (last year I ate lunch at my desk as quickly as possible while doing work- far from ideal).
5) Continue to follow my updated budget (I am saving to buy my own place hopefully by the mid to end of 2013).
6) Try one new restaurant a month (I like trying new places).
7) Take a risk (I am so a play it safe kind of girl and should be a wee bit more adventurous to make sure I am living life not just watching it).

Takeout, Baking, and Smoothie in a glass Monday, Jun 4 2012 

Where was I since leaving off last? Late last week I brought take-out home for lunch for mom and I from one of my favorite places Heart & Soy.

I brought home tofu pad Thai, yellow curry soup, jicama spring rolls, and barbecue tofu and rice.

I also made pumpkin whoopie pies (recipe from Oh She Glows) for my cousin’s high school graduation party and then pumpkin muffins (recipe from the cookbook Vegan with a Vengence) for breakfast with my aunt and uncle the next day)

This morning I made a delicious smoothie- just Soymilk, strawberries, and banana-then it was up to Lexington for the morning and afternoon.

I have so much to do before I leave for vacation-must be productive tomorrow!

Half Peach Vegan Bakery Thursday, May 31 2012 

Long time no post…again. Things have been busy lately. The school I work at is on summer vacation (I’m still doing some work though but at a much more relaxed pace), started exercising regularly again, went to trolley hop, earned my CCC-SLP certification (!), and attended multiple farmers markets. At one particular farmers market I stopped at Half Peach Vegan Bakery after hearing about it from multiple sources. I picked up 4 muffins and 2 chocolate chip cookies. So far everything I have had is delicious. I will be stopping by here regularly throughout the market season. For breakfast today I had a banana cranberry muffin with local blueberries and half a banana.
