Good Food Monday, Jul 30 2012 

Saturday was my first visit to the St. Matthews farmer’s market since being in Alaska. I got a lot of goodies and they have been making my meals a lot tastier and interesting.





Sunday I met a good friend from high school. I had not seen her in a long time and it was great to catch up. You know it is a good friendship when you can pick up right where you left off. We met at the halfway point in LaGrange. I live in Louisville, she lives in Carrollton so this was perfect. We met at One Nineteen West for dinner. I had pepperocini peppers stuffed with pimento cheese(!) and deep fried. They came with the best hot pepper jelly. I also got a salad with fixings and bleu cheese dressing that had chunks of cheese in it-very tasty. To finish it off I had a slice of banana toffee pie and a bite of bourbon chocolate brownie. It was so good to see Kristin and I cannot wait for her wedding in October!


The End of Summer Monday, Jul 30 2012 

I am considering tomorrow the end of summer. I start professional development seminars at my school on Wednesday and then will be in regularly until school starts on August 15. Even though summer is at an end I have had some great last days of vacation. Here is a recap of the last week.

7-20: Still in Alaska-we went out to college town pizza and then returned to Cold Stone with a group where I enjoyed a massive peanut butter combination ice cream in a waffle cone.

7-21: cappuccino in Lulu’s while reading the newspaper. In reading the paper I discovered all about the “ear pulling contest”. After some java my sister and I headed to the farmer’s market. I had to get one more fix of goodies from the nice lady at Honey Bakery. I also got my Fairbanks falafel fix. Pita place seriously has the best. I promptly demolished it in the car, hence the blurry pic.

7-22: my farewell dinner with the group at Lavelle's in downtown Fairbanks. I had the flatbread with rosemary, sweet red onion, and gorgonzola along with a Cesar salad. Dessert was chocolate Kaluha cake. It was good but I must say I liked my sister and brother-in-law's chocolate mousse better. I also had a bite of Creme brûlée.
Tonight was also the day I booked my ticket for a visit over fall break. That is right…I am returning in October!
7-23: marked my first overnight camping trip. My first time in a tent went well and I slept so good! Our destination was at Ophir Creek campground and we had the whole right side of the area to ourselves! Food included wild Alaskan salmon (that BIL caught), corn, s'mores, eggs, biscuits, and bacon.

7-24: back from camping and then headed to the airport for my overnight flight.



Showering with Love Friday, Jul 20 2012 

Last Saturday was filled with family, friends, and food. My sister’s co-worker hosted a baby shower for her. It was so much fun and I am thankful I was able to be here to be apart of it. Activities included each guest designing a scrapbook page that would be put in an album, decorating onesies, and trying to guess various baby items hidden in opaque bags. The food was also wonderful and included various finger food. I made pizza dip

The Original Sunday, Jul 15 2012 

On Thursday my sister worked late so the 3 of us went to one of my favorite places to eat Silver Gulch
Despite slow service we had a great meal. I started off with two of these (the original midori margarita!)

These had halibut and coconut in them and were served with three sauces- sesame, raspberry jalapeño (couldn’t taste the spice though), and a lemon aioli which was my favorite. They were good but i prefer a good Southern cornmeal version. For my entree I had a buffalo burger with gorgonzola cheese and fries.

Friday started off with an early breakfast at The Bakery Restaurant. I had pancakes topped with whipped cream, bananas, and syrup. Later in the day though I was feeling rather sick but luckily rallied by Saturday morning. It was great timing because I needed to head to the farmer’s market in Fairbanks, prep food, and attend my sister’s baby shower that evening. Yummy food to come!

Goals for the Rest of 2012 Thursday, Jul 12 2012 

So 2012 is more than half over and I wanted to make myself some goals to finish the year strong. However 3 & 4 obviously don’t apply until the school year starts again.

Goals for the rest of 2012:
1) Complete my 8 week 5K training plan (I haven’t run for a while and need to start from scratch).
2) Be able to run 5 miles without stopping by the end of 2012 (I love running and the way it makes me feel. The farthest I have ever run at once is 4.0 miles).
3) Take one night off during the work week to do non-school related things (I make no secret of the fact that I have a hard time letting go and not thinking about work).
4) Eat lunch away from my desk, preferably with other staff (last year I ate lunch at my desk as quickly as possible while doing work- far from ideal).
5) Continue to follow my updated budget (I am saving to buy my own place hopefully by the mid to end of 2013).
6) Try one new restaurant a month (I like trying new places).
7) Take a risk (I am so a play it safe kind of girl and should be a wee bit more adventurous to make sure I am living life not just watching it).

Anyone else have goals they are working on?

At Peace Thursday, Jul 12 2012 

On Monday my brother-in-law and I took a 2.5+ hour car trip (each way!) past Delta Junction to the Gulkana Glacier. We drove past Salcha, Eielson Airforce Base, and Fort Greely. The drive was very scenic and we saw moose x6!

We hiked around the surrounding area and it was so peaceful. With the exception of seeing a couple at the end, we had the whole place to ourselves! This I felt was so Alaskan. I also did hardcore hiking (compared to the trails we have in KY) and also walked along the stream a.k.a glacial runoff.

Jeans and Sweatshirts Tuesday, Jul 10 2012 

First of all, I must say that I am loving the fact that it is mid-July and I get to wear sweatshirts and jeans mist days. It has been anywhere from the 50s to low 70s here in Alaska. I feel bad for all those back in KY (and across the country) who have had multiple days of 100+ degree heat. Let’s get to what has been happening here. I have been busy since the mid-week holiday of July 4.
On Thursday my sister and I had breakfast at Sourdough Sam’s. Rumor has it that when the building burned a family member went back in to get the sourdough starter. My sister had the sourdough pancakes which I tasted and were unique in a good way. I ordered the Belgian waffle with strawberries and whipped cream. Since that was not enough sugar for one day I also got a caramel latte shake from the “farthest north” Cold Stone ice cream store later in the day.
For dinner I made this recipe for baked spaghetti.

Friday involved going to Irasha for sushi and for the third time I got the Mount McKinley roll. I cannot help it-it is just so good that I never want to get anything different. While running errands my sister picked up this:

Saturday involved a trip to the Fairbanks Farmers Market! It was quite large and busy which is always a good thing.
My sister found a beautiful bouquet of peonies:

We got some veggies and stopped at the honey bakery booth for fresh bread, macaroons, blueberry cake and the most delicious cream rolls which were fresh cream surrounded by homemade waffle cone wrapping.
Later that day my sister made chicken salad

20120710-095941.jpg which contained light and dark meat (from a rotisserie chicken), Italian parsley, mayo, tomato, red onion, sliced almonds, and Parmesan cheese.
I made my favorite pimento cheese

I didn’t measure but used freshly grated sharp cheddar, real mayo, cayenne, and diced pimentos. Sometimes I also add diced jalapeños for a spicy kick.
Sunday was my brother-in-law’s 30 birthday. My sister made French toast

We celebrated with dinner at Shogun Hibachi Grill and followed with homemade ice cream cake.


My brother-in-law and I went on an adventure yesterday but that deserves it’s own post which will come soon.

Four on the Fourth Wednesday, Jul 4 2012 

I realized that this marks my fourth post on the fourth. My Fourth of July holiday involved using the crockpot for the first time (gasp) to make these

They were most definitely fall off the bone delicious. Rounding out the meal were baked beans, baked potatoes and salad. I cannot wait to try this recipe again for my dad. This might also have made me a crockpot convert.
