Sometimes simple is best. All ingredients were from the farmers’ market making this a delicious local dinner.



Good Food Monday, Jul 30 2012 

Saturday was my first visit to the St. Matthews farmer’s market since being in Alaska. I got a lot of goodies and they have been making my meals a lot tastier and interesting.





Sunday I met a good friend from high school. I had not seen her in a long time and it was great to catch up. You know it is a good friendship when you can pick up right where you left off. We met at the halfway point in LaGrange. I live in Louisville, she lives in Carrollton so this was perfect. We met at One Nineteen West for dinner. I had pepperocini peppers stuffed with pimento cheese(!) and deep fried. They came with the best hot pepper jelly. I also got a salad with fixings and bleu cheese dressing that had chunks of cheese in it-very tasty. To finish it off I had a slice of banana toffee pie and a bite of bourbon chocolate brownie. It was so good to see Kristin and I cannot wait for her wedding in October!

The Original Sunday, Jul 15 2012 

On Thursday my sister worked late so the 3 of us went to one of my favorite places to eat Silver Gulch
Despite slow service we had a great meal. I started off with two of these (the original midori margarita!)

These had halibut and coconut in them and were served with three sauces- sesame, raspberry jalapeño (couldn’t taste the spice though), and a lemon aioli which was my favorite. They were good but i prefer a good Southern cornmeal version. For my entree I had a buffalo burger with gorgonzola cheese and fries.

Friday started off with an early breakfast at The Bakery Restaurant. I had pancakes topped with whipped cream, bananas, and syrup. Later in the day though I was feeling rather sick but luckily rallied by Saturday morning. It was great timing because I needed to head to the farmer’s market in Fairbanks, prep food, and attend my sister’s baby shower that evening. Yummy food to come!

Jeans and Sweatshirts Tuesday, Jul 10 2012 

First of all, I must say that I am loving the fact that it is mid-July and I get to wear sweatshirts and jeans mist days. It has been anywhere from the 50s to low 70s here in Alaska. I feel bad for all those back in KY (and across the country) who have had multiple days of 100+ degree heat. Let’s get to what has been happening here. I have been busy since the mid-week holiday of July 4.
On Thursday my sister and I had breakfast at Sourdough Sam’s. Rumor has it that when the building burned a family member went back in to get the sourdough starter. My sister had the sourdough pancakes which I tasted and were unique in a good way. I ordered the Belgian waffle with strawberries and whipped cream. Since that was not enough sugar for one day I also got a caramel latte shake from the “farthest north” Cold Stone ice cream store later in the day.
For dinner I made this recipe for baked spaghetti.

Friday involved going to Irasha for sushi and for the third time I got the Mount McKinley roll. I cannot help it-it is just so good that I never want to get anything different. While running errands my sister picked up this:

Saturday involved a trip to the Fairbanks Farmers Market! It was quite large and busy which is always a good thing.
My sister found a beautiful bouquet of peonies:

We got some veggies and stopped at the honey bakery booth for fresh bread, macaroons, blueberry cake and the most delicious cream rolls which were fresh cream surrounded by homemade waffle cone wrapping.
Later that day my sister made chicken salad

20120710-095941.jpg which contained light and dark meat (from a rotisserie chicken), Italian parsley, mayo, tomato, red onion, sliced almonds, and Parmesan cheese.
I made my favorite pimento cheese

I didn’t measure but used freshly grated sharp cheddar, real mayo, cayenne, and diced pimentos. Sometimes I also add diced jalapeños for a spicy kick.
Sunday was my brother-in-law’s 30 birthday. My sister made French toast

We celebrated with dinner at Shogun Hibachi Grill and followed with homemade ice cream cake.


My brother-in-law and I went on an adventure yesterday but that deserves it’s own post which will come soon.

Four on the Fourth Wednesday, Jul 4 2012 

I realized that this marks my fourth post on the fourth. My Fourth of July holiday involved using the crockpot for the first time (gasp) to make these

They were most definitely fall off the bone delicious. Rounding out the meal were baked beans, baked potatoes and salad. I cannot wait to try this recipe again for my dad. This might also have made me a crockpot convert.

Last Night’s Dinner Wednesday, Jul 4 2012

Walkin’ on the Beach Friday, Jun 15 2012 

This vacation is starting to wind down. My aunt and uncle headed back to KY today so last night we visited the beach. The condo we are staying at is a short walk to the beach:


and the ice cream store with 92 flavors. I got two scoops in a waffle cone. Ice cream for dinner, yes please!

After seeing my aunt and uncle off this morning I went back to sleep, enjoyed coffee and breakfast and then took a two hour beach walk with my dad. I enjoy walking anyway but especially enjoy it when I get to look at the ocean.

For a late lunch/early dinner we went to Mellow Mushroom at my request. I read on other blogs that they offer a tofu option and knew I had to try it,

Hummus to start-it was delicious. My mom doesn’t usually like hummus but enjoyed this.


Sadly I forgot to take a picture of my pizza. By the time the food got there I dug right in. It was epic though and made me excited that the restaurant will be coming to Louisville. I ordered a small pizza with red sauce, black olives, green peppers, jalapeños, tofu, and vegan cheese.

Now it is time for card playing and movie watching. I saw Apollo 13 for the first time tonight and it made my list of favorite movies.

Anyone else enjoying or looking forward to a summer vacation?

I must say I have enjoyed my time at the beach but am looking forward to this coming Tuesday. I am leaving for Alaska to visit my sister and brother-in-law.

Sweet Saturday Sunday, Mar 25 2012 

Saturdays are so very sweet. It is the only day where I do absolutely no work. While I love what I do, I look forward to one day each week of no work email, therapy planning, or IEP writing. Taking one day for myself is my way to relax, recharge, and renew myself so as to better tackle the coming week.

This Saturday started with me sleeping in and then enjoying coffee in my pajamas. Afterwards I went to my salon and got my eyebrows waxed. I may be wierd but I look forward to this everytime. The rest of my errands included going to a bakery to get these:


Returning a shirt to The Limited (yay for $26 credit).

Going to Whole Foods for a few things

Heading to City Girl Farm Coffee for a soy latte. I had a living social deal and went there 2 days in a row


Came home, took a power nap, caught up on Hulu shows, NCIS episodes on DVD, watched the Louisville game and then went to a new restaurant-Simply Thai.

Food and a 5K Sunday, Mar 11 2012 

I have a lot to catch up on. Despite always trying to be regular with my posts I realize that right now summary posts work just fine.

So how about some food?
First, fresh pasta and fresh ricotta are awesome:



Put the two together with some red sauce and you have a yummy quick dinner


Wild Alaskan Salmon which makes me think of my sister and brother in law

Dark chocolate my parents brought back from Vegas


Local eggs taste so much better


I also did my first 5K where I ran the whole thing! My final time was 33:54!
