Showering with Love Friday, Jul 20 2012

Last Saturday was filled with family, friends, and food. My sister’s co-worker hosted a baby shower for her. It was so much fun and I am thankful I was able to be here to be apart of it. Activities included each guest designing a scrapbook page that would be put in an album, decorating onesies, and trying to guess various baby items hidden in opaque bags. The food was also wonderful and included various finger food. I made pizza dip

Before the shower we hit up the farmer’s market again. Chocolate pie among some other goodies

This day also marked one month til school starts

On Wednesday I made this

And yesterday I made this:

Less than a week until I return to the heat and humidity of Louisville.

Four on the Fourth Wednesday, Jul 4 2012

I realized that this marks my fourth post on the fourth. My Fourth of July holiday involved using the crockpot for the first time (gasp) to make these

They were most definitely fall off the bone delicious. Rounding out the meal were baked beans, baked potatoes and salad. I cannot wait to try this recipe again for my dad. This might also have made me a crockpot convert.

Happy Independence Day!

Last Night’s Dinner Wednesday, Jul 4 2012

I was on dinner duty last night. After going to the grocery store this is what I made.

Jessica’s Cashew Chicken

I served it with rice and eggrolls.

Thai Peanut Sauce Wednesday, Jul 4 2012

Here is the recipe my sister used a few days ago. She also adds about 1 T. creamy peanut butter to the mixture.

It was delicious and will be a regular in the future.

Takeout, Baking, and Smoothie in a glass Monday, Jun 4 2012

Where was I since leaving off last? Late last week I brought take-out home for lunch for mom and I from one of my favorite places Heart & Soy.

I brought home tofu pad Thai, yellow curry soup, jicama spring rolls, and barbecue tofu and rice.

I also made pumpkin whoopie pies (recipe from Oh She Glows) for my cousin’s high school graduation party and then pumpkin muffins (recipe from the cookbook Vegan with a Vengence) for breakfast with my aunt and uncle the next day)

This morning I made a delicious smoothie- just Soymilk, strawberries, and banana-then it was up to Lexington for the morning and afternoon.

I have so much to do before I leave for vacation-must be productive tomorrow!

Food and a 5K Sunday, Mar 11 2012

I have a lot to catch up on. Despite always trying to be regular with my posts I realize that right now summary posts work just fine.

So how about some food?
First, fresh pasta and fresh ricotta are awesome:

Put the two together with some red sauce and you have a yummy quick dinner

Wild Alaskan Salmon which makes me think of my sister and brother in law

Chocolate covered cherries

Dark chocolate my parents brought back from Vegas

Local eggs taste so much better

I also did my first 5K where I ran the whole thing! My final time was 33:54!

Next post- some yummy restaurants

Prepped Sunday, Feb 12 2012

Here are the foods I prepped last Saturday night so that I could enjoy them throughout the week. The chickpea burgers were my favorite. They kind of tasted like a baked hushpuppy!

Chickpea burgers

Corn polenta with nutritional yeast and red peppers

Carrot Ginger Soup with kale, lentils, and wild rice. The soup base was from a box and the rest I just added in
