It’s been a long time Sunday, Oct 28 2012 

I have been absent for quite a while but things have been as busy as always. I left off with the end if summer and returning from my trip to Alaska. Well I just got back from ANOTHER trip. My school was on fall break and I took advantage of getting to visit my Sis and brother-in-law. On this trip there was a new little lady to visit -my niece Emma. At 6 weeks old she has quite the personality and meeting her might just be the happiest moment of my life.

In other news work has been very busy and stressful but I try and take it a day at a time and focus on the positives instead of the negatives though sometimes it is hard.

I have also started the home-buying process and should have good news on Monday afternoon!

The End of Summer Monday, Jul 30 2012 

I am considering tomorrow the end of summer. I start professional development seminars at my school on Wednesday and then will be in regularly until school starts on August 15. Even though summer is at an end I have had some great last days of vacation. Here is a recap of the last week.

7-20: Still in Alaska-we went out to college town pizza and then returned to Cold Stone with a group where I enjoyed a massive peanut butter combination ice cream in a waffle cone.

7-21: cappuccino in Lulu’s while reading the newspaper. In reading the paper I discovered all about the “ear pulling contest”. After some java my sister and I headed to the farmer’s market. I had to get one more fix of goodies from the nice lady at Honey Bakery. I also got my Fairbanks falafel fix. Pita place seriously has the best. I promptly demolished it in the car, hence the blurry pic.

7-22: my farewell dinner with the group at Lavelle's in downtown Fairbanks. I had the flatbread with rosemary, sweet red onion, and gorgonzola along with a Cesar salad. Dessert was chocolate Kaluha cake. It was good but I must say I liked my sister and brother-in-law's chocolate mousse better. I also had a bite of Creme brûlée.
Tonight was also the day I booked my ticket for a visit over fall break. That is right…I am returning in October!
7-23: marked my first overnight camping trip. My first time in a tent went well and I slept so good! Our destination was at Ophir Creek campground and we had the whole right side of the area to ourselves! Food included wild Alaskan salmon (that BIL caught), corn, s'mores, eggs, biscuits, and bacon.

7-24: back from camping and then headed to the airport for my overnight flight.

Showering with Love Friday, Jul 20 2012 

Last Saturday was filled with family, friends, and food. My sister’s co-worker hosted a baby shower for her. It was so much fun and I am thankful I was able to be here to be apart of it. Activities included each guest designing a scrapbook page that would be put in an album, decorating onesies, and trying to guess various baby items hidden in opaque bags. The food was also wonderful and included various finger food. I made pizza dip

At Peace Thursday, Jul 12 2012 

On Monday my brother-in-law and I took a 2.5+ hour car trip (each way!) past Delta Junction to the Gulkana Glacier. We drove past Salcha, Eielson Airforce Base, and Fort Greely. The drive was very scenic and we saw moose x6!

We hiked around the surrounding area and it was so peaceful. With the exception of seeing a couple at the end, we had the whole place to ourselves! This I felt was so Alaskan. I also did hardcore hiking (compared to the trails we have in KY) and also walked along the stream a.k.a glacial runoff.

Jeans and Sweatshirts Tuesday, Jul 10 2012 

First of all, I must say that I am loving the fact that it is mid-July and I get to wear sweatshirts and jeans mist days. It has been anywhere from the 50s to low 70s here in Alaska. I feel bad for all those back in KY (and across the country) who have had multiple days of 100+ degree heat. Let’s get to what has been happening here. I have been busy since the mid-week holiday of July 4.
On Thursday my sister and I had breakfast at Sourdough Sam’s. Rumor has it that when the building burned a family member went back in to get the sourdough starter. My sister had the sourdough pancakes which I tasted and were unique in a good way. I ordered the Belgian waffle with strawberries and whipped cream. Since that was not enough sugar for one day I also got a caramel latte shake from the “farthest north” Cold Stone ice cream store later in the day.
For dinner I made this recipe for baked spaghetti.

Friday involved going to Irasha for sushi and for the third time I got the Mount McKinley roll. I cannot help it-it is just so good that I never want to get anything different. While running errands my sister picked up this:

Saturday involved a trip to the Fairbanks Farmers Market! It was quite large and busy which is always a good thing.
My sister found a beautiful bouquet of peonies:

We got some veggies and stopped at the honey bakery booth for fresh bread, macaroons, blueberry cake and the most delicious cream rolls which were fresh cream surrounded by homemade waffle cone wrapping.
Later that day my sister made chicken salad

20120710-095941.jpg which contained light and dark meat (from a rotisserie chicken), Italian parsley, mayo, tomato, red onion, sliced almonds, and Parmesan cheese.

I didn’t measure but used freshly grated sharp cheddar, real mayo, cayenne, and diced pimentos. Sometimes I also add diced jalapeños for a spicy kick.
Sunday was my brother-in-law’s 30 birthday. My sister made French toast

We celebrated with dinner at Shogun Hibachi Grill and followed with homemade ice cream cake.

Whickersham Dome Wednesday, Jul 4 2012 

On Monday July 2 I went with my brother-in-law and the 2 dogs to Whickersham Dome Trailhead. Despite the threatening clouds we decided we should try and get a small hike in since the next few days looked more threatening. Good thing we did because the next day it poured.

Despite being overcast it was a beautiful site to see. We only saw 2 other small groups the whole time so it was like having the trail to ourselves. The dogs thoroughly enjoyed it as well.

The road that we took to get there is also the start of the road that is on the t.v. show Ice Road Truckers. On the way back we saw a moose on the road that made it’s way back to the wooded area. We also stopped at the legend Hilltop Truck Stop for a slice of their famous pie. I chose the chocolate pie which was chocolate mousse and covered in whipped cream. I wish I had a picture of this because it was amazing!

Alaska, thus far Saturday, Jun 23 2012 

Well it is now Friday and I have a lot to catch up on since I arrived late Tuesday night.

By the time my plane landed it was 11:30 Alaska time. My sister picked me up and it was so wonderful to see her! We arrived at the house where I was greeted by the “welcoming committee”:

They are all rescues and are super sweet. This was my first time meeting Buck since he was adopted after my visit last year.

Despite eating dinner before my flight left from Denver I was hungry by the time my flight got in and had leftover kabobs at the house-bacon wrapped chicken with mushrooms and pineapple straight from the bowl because I am classy like that.

On Wednesday my sister was working but my brother-in-law was off and we had fun doing this:

After being outside all day it was followed by the Fairbanks Goldpanners baseball game and then consumption of a key lime martini at The Pump House.

Thursday I went to lunch with my sister and also had a delicious mocha:

Friday my sister and I went for a walk first thing but the Mosquitos were absolutely ridiculous so we did not stay too long. They were biting our arms, legs, face, ears…it was horrible.

Our remedy for the day was going out for sushi and fro yo for lunch.
At Irasha we split the Tom and Jerry which was deep fried rice, spicy tuna, avocado and some type of sauce

Here is mine and my sister’s. She ordered the lighthouse roll (pictured in front) which had a light surrounded by cucumber. Both were delicious!

Afterwards we went to honeydew’s frozen yogurt. I had cake batter and chocolate with brownie bites, chocolate chips, sprinkles, M & M’s, and snickers with a cherry on top

After running errands I promptly fell asleep due to my consumption of a dose of Benedryl due to the previously mentioned mosquito incident.

Dinner tonight was homemade personal pizza’s on the grill. This was my first time having pizza on the grill and I will definitely have to do this again.

Mine had sauce, mozzarella cheese, sage sausage, prosciutto, pineapple, onions, and green peppers.

I also enjoyed a midori margarita on the deck. I am enjoying being able to have access to a real deal deck, especially for eating dinner.
