The End of Summer Monday, Jul 30 2012 

I am considering tomorrow the end of summer. I start professional development seminars at my school on Wednesday and then will be in regularly until school starts on August 15. Even though summer is at an end I have had some great last days of vacation. Here is a recap of the last week.

7-20: Still in Alaska-we went out to college town pizza and then returned to Cold Stone with a group where I enjoyed a massive peanut butter combination ice cream in a waffle cone.

7-21: cappuccino in Lulu’s while reading the newspaper. In reading the paper I discovered all about the “ear pulling contest”. After some java my sister and I headed to the farmer’s market. I had to get one more fix of goodies from the nice lady at Honey Bakery. I also got my Fairbanks falafel fix. Pita place seriously has the best. I promptly demolished it in the car, hence the blurry pic.

7-22: my farewell dinner with the group at Lavelle's in downtown Fairbanks. I had the flatbread with rosemary, sweet red onion, and gorgonzola along with a Cesar salad. Dessert was chocolate Kaluha cake. It was good but I must say I liked my sister and brother-in-law's chocolate mousse better. I also had a bite of Creme brûlée.
Tonight was also the day I booked my ticket for a visit over fall break. That is right…I am returning in October!
7-23: marked my first overnight camping trip. My first time in a tent went well and I slept so good! Our destination was at Ophir Creek campground and we had the whole right side of the area to ourselves! Food included wild Alaskan salmon (that BIL caught), corn, s'mores, eggs, biscuits, and bacon.

7-24: back from camping and then headed to the airport for my overnight flight.




Lunch with Mom Monday, Jun 18 2012 

I took my mom out for lunch in between running errands and packing. We went to Meridian Cafe around 11:30. I have been there for breakfast before but never lunch.

I ordered the gourmet grilled cheese which contained 3 types of cheeses, local bacon, avocado, and tomatoes. It was delicious!


Now back to packing. I think Wally might want to go to Alaska too!



Takeout, Baking, and Smoothie in a glass Monday, Jun 4 2012 

Where was I since leaving off last? Late last week I brought take-out home for lunch for mom and I from one of my favorite places Heart & Soy.

I brought home tofu pad Thai, yellow curry soup, jicama spring rolls, and barbecue tofu and rice.

I also made pumpkin whoopie pies (recipe from Oh She Glows) for my cousin’s high school graduation party and then pumpkin muffins (recipe from the cookbook Vegan with a Vengence) for breakfast with my aunt and uncle the next day)


This morning I made a delicious smoothie- just Soymilk, strawberries, and banana-then it was up to Lexington for the morning and afternoon.

I have so much to do before I leave for vacation-must be productive tomorrow!


Dining out Sunday, Apr 22 2012 

This past week was all about dining out. As I type this I am sitting in a restaurant grabbing a light lunch.

I went to Heart & Soy on Bardstown road and got my favorite yellow curry soup and a side of jicama rolls. The picture does not do the soup justice.



That is tofu chocolate peanut butter pie. So good.

I also went to the sister restaurant Roots for the first time:

Thursday was another first time for me at the restaurant Dragon King’s Daughter

I got edamame and 2 sushi rolls. Followed by dessert at Sweet Surrender.




After today I will be dining in-well for a few days anyways 🙂

Hillbilly Tea Lunch Tuesday, Apr 10 2012 

I have been to Hillbilly Tea once before for breakfast. Yesterday my mom and I went for lunch. I was just as impressed this time as I was on my last visit. The menu is varied and creative as well as offering meat and vegan items. This place is seriously a gem. I can’t wait to bring friends here. One thing to note is that there is on street parking. If it is during the day or afternoon, make sure you have change for the meters.

I ordered the vegan burger and had cheese and bacon added to it. For my side I got roasted sweet potatoes.


It came with a barbecue type sauce but the burger was perfect as is and so I didn’t use any.

For dessert I got some type of moon pie cookie thing. Pardon my lack of appropriate descriptors.

So Much Fun Tuesday, Apr 10 2012 

I have been having so much fun lately and have been enjoying my spring break.

What I have been up to:

1) I caught up with a friend at 60 West over martinis. We were there for 4 hours and I tried 3 different flavors. My favorite one tasted like a slightly sweet lemonade. Good food and dessert was shared.
2) I have discovered peanut butter on toast with maple syrup is delicious.

3) I got a new cookbook for $16

4) I visited my favorite coffee shop in Lexington, Common Grounds, where I spent many hours over my 6 years in Lexington

5) Smoked salmon cream cheese is a good topper for bagels

6) I am not a fan if milkshakes but fancy coffee drinks are right up my ally

7) I ate at The Pub when I was in Lexington to celebrate my friend’s birthday. Unfortunately they don’t have sweet potato fries anymore.
8) Tomorrow I am going to try and convince myself to do stuff for work…any suggestions to help my motivation over break?

Battle of the Pizza Sunday, Feb 26 2012 

Last Thursday I tried a new (to me) pizza place Coal’s Artisan Pizza and on Saturday I went to an old favorite Clifton’s Pizza Company. Let’s compare:

First up, Waverly from Coal’s


Second, veggie from Clifton’s Pizza

Both were delicious on the night I had them. However the next day was a different story. The Waverly pizza had gorgonzola on it and despite being put promptly in the fridge the night before already had mold on the crust when I went to have it for lunch. I was a tad disappointed especially since the pizza was a total of $18. I can’t figure out what caused the mold to appear so quickly. I have had gorgonzola on pizza before and it lasted for a few days. Oh well. Can’t win them all. I still want to try some other Coal’s offerings so I’m hoping that was a fluke.

Clifton’s veggie however was delicious (and mold free) the next day.


Food Saturday Sunday, Jan 29 2012 

I went to so many good places today. After going to the bank I started what ended up being a “food tour”.

First up, Cumberland Brewery on Bardstown Road. I got the veggie burger (a falafel patty) with sweet potato fries. Anyone who knows me, knows I love sweet potato fries!


I then headed to Sweet Surrender where I got a slice of samoa cake and a blend mocha. Hello Chocolate!


I then hit up Queen of Sheba for some delicious Ethiopian food. I stuck with my usual, the vegetarian combo for one. It cones with a side salad, injera, two types of lentils, a cabbage dish, and a collard greens dish.

After dinner we headed to Quill’s coffee on Baxter Avenue to end the night. I stuck with a classic latte which was delicious.


Such good food today and I tried a new restaurant (Cumberland Brewery). So thankful my friends came down for the evening.

Pita Delite-ful Monday, Jan 16 2012 

Well the name of the restaurant is really just called Pita Delites but I couldn’t help myself. I have been there once before way back in the day when they were at a different location. Honestly, I do not know why it took me so long to go back. The food is delicious ( I had the falafel sandwich and an order of hummus). It is a small quaint place which is another reason why I like it so much. I have a feeling this is going to be a new favorite.

Oh, and I cannot find a website so all the information I got is courtesy of Yelp.

Sake Blue Thursday, Dec 29 2011 

I love sushi. It is one of my all time favorite foods. When I was younger I only ordered the vegetable roll but thankfully my palate had expanded since then.

Today I met my old college roommate at a new to me sushi restaurant here in Louisville called Sake Blue. It was delicious. I am convinced though that anytime I order sushi at least one of the rolls has to have either cream cheese or a fried component or best case scenario, both!

I started with miso soup and then we split the following:


We got:
1) the sweet potato roll which was like sweet potato fries in a sushi roll… Genius
2) the mango tango which had crab, asparagus, cucumber, sliced mango and a white sauce
3) the MJ roll which was deep fried spicy crawfish, fresh jalapeño cream cheese and mozzarella cheese
